This article is an investigation into the short-term effects of two specific diets on both traditional and newer measures of vascular health in people over the age of 50 who have a cardiovascular risk factor. With low-carbohydrate diet maintenance goals, the low-carbohydrate diet would be consistent with low-carbohydrate diet maintenance goals, with fewer than 500 grams per day. Meals will be supplied, and participants will follow each diet for two weeks for two weeks, with a 4-6 week washout period between dietary phases. Subjects will be randomly chosen 1:1 to begin with either the plant-based diet or the low-carbohydrate diet.
